No Time to Cook

"We love your recipes, Granny, but we work and have kids and we don't always have time to cook.  Do you have any recipes for busy working moms like us?"

But of course!  Let me help you by showing you how to make...



Creamy Crockpot Beef is a dish you can toss into your crockpot in the morning and let it cook on low all day while you're at work.  With just a few simple steps before serving, you have a complete, delicious meal in a bowl.

Start by seasoning 2 lbs. of stew beef with salt and pepper.  Chop an onion.  Clean and quarter 4 or 5 fresh mushrooms.  Toss these all into the crockpot.

Next prepare a quick sauce to pour over the top:  Mix a can of cream of chicken soup (or better yet, 2 cups of leftover sauce from my Company Chicken recipe) with a cup of red wine (or beef broth if you prefer.)  If you want to make this really rich and beefy, you can add a tablespoon of Kitchen Bouquet Browning & Seasoning Sauce, but it's optional.


Set the crockpot to cook on low, and let it go for 6 to 8 hours.  (If it cooks an hour or two longer while you're away at work, it's not a problem.)

About half an hour before serving, stir in a cup of frozen cut green beans and continue cooking while you prepare some rice or mashed potatoes or noodles.  (Better yet, make some Zoodles.)

Finally, just before serving, stir in a cup of sour cream or a can of coconut creme.  Ladle the hot, saucy beef over whatever starch you've prepared, and there you have it:  a complete dinner of tender beef in a rich, creamy sauce with plenty of wholesome vegetables... it really shouldn't be this easy, but it is!
